Harvesting sap from coconut trees
The process begins with the careful harvesting of sap from coconut flowers. Farmers climb the trees to gently cut into the flower stems, allowing the sweet sap to flow out. This traditional method ensures that the sap is collected without compromising the health of the coconut trees.
Gentle cooking to reveal the aromas
The harvested sap is then slowly heated over low heat in metal pans. This cooking process helps concentrate the sap while preserving its natural aromas and richness in nutrients. The gentle heat gradually transforms the sap into a thick, golden syrup.
Natural crystallization of sugar
Once the syrup is sufficiently concentrated, it is removed from the heat and left to cool. During this time, the syrup naturally crystallizes, forming sugar grains. This natural process ensures that the sugar retains all the characteristic flavor of coconut sugar, with its caramelized notes.
Sieving for a homogeneous texture
To achieve a fine and consistent texture, the granulated sugar is carefully sieved. This step ensures that only the finest sugar grains pass through, resulting in a high-quality final product that is ideal for cooking, baking and beverages. Sieving also removes any impurities, ensuring maximum purity.
