OUR VANILLA BEANS

Discover the true essence of vanilla with our collection of carefully selected beans. Sourced from the best plantations in Madagascar and Indonesia, our vanilla beans offer unmatched quality, whether you are a passionate chef or a baking enthusiast. Each pod is a concentrate of intense flavors, ready to enhance your culinary creations, whether sweet or savory.

What are vanilla beans and where do they come from?

Vanilla, one of the most prized flavors in the world, comes from the Vanilla Planifolia orchid. Its journey from flower to captivating aroma is captivating, with each origin revealing unique characteristics. Here’s a look at the two main varieties we offer:

Madagascar vanilla , also called Bourbon vanilla, is the most renowned. Harvested in Madagascar, Reunion and the Comoros, it offers rich and creamy notes that enhance desserts such as crème brûlée, ice creams and pastries.

Indonesian vanilla , grown on the islands of Java, Bali and Sulawesi, is distinguished by its woody and smoky aromas. Highly prized for the production of vanilla extracts, it holds up well to cooking and is ideal for fusion dishes, sauces and exotic desserts.

How are our vanilla beans grown?

The exceptional quality of our vanilla beans is the result of a rigorous cultivation and processing process, which includes several essential steps:

Hand Pollination : Every morning for 3 to 4 months, farmers go to their plantations to pollinate the vanilla flowers by hand. These flowers only stay open for a few hours and must be pollinated quickly to ensure the formation of beans.

Harvesting and blanching : After about 9 months of maturation, the beans are harvested and then immediately blanched in hot water. This step stops their growth and triggers the development of aromas that will be fully revealed during drying.

Sun-drying : The beans are dried in the sun for several weeks. This process reduces moisture and intensifies flavors, transforming the green beans into their shiny, fragrant black form.

Curing and Inspection : After drying, the beans are cured under controlled conditions to allow the flavours to fully develop. Each pod is then manually inspected to ensure it meets our high quality standards before packaging.

Vanilla beans, extract or paste, how to choose?

When it comes to vanilla , the choices can seem endless: fragrant beans, powerful extracts, or creamy pastes. Each product has its own unique characteristics that influence the flavors of our recipes.

Vanilla extract is the best known. Obtained by macerating vanilla beans in a mixture of alcohol and water, it offers a rich and versatile flavor that works well in classic desserts, such as cakes and cookies, as well as in sauces and drinks.

Vanilla paste is a convenient alternative to beans and extract . It is more concentrated, composed of vanilla seeds and extract, with a thick, syrupy consistency. It is ideal for showcasing vanilla in recipes where its visual aspect is important, such as custards, ice creams and frostings .

Vanilla beans , on the other hand, are the essence of the plant, offering a complex and deep flavor. Used in homemade ice creams, creams and infusions, they require more effort but bring an incomparable flavor.

Whether you choose extract, paste, or beans , each form of vanilla brings a unique touch to your culinary creations.
